Banana-chocolate chip muffins
Ingredients
1 stick butter, melted
3/4 c. brown sugar
1/2 c. Greek yogurt
1/2 c. overripe bananas, mashed
1/2 c. chocolate chips
2 eggs
1 t. vanilla
2 c. flour
1 t. baking powder
1/2 t. cinnamon
1/2 t. salt
1/4 t. baking soda
1/4 t. ground ginger
Instructions
Whisk butter, brown sugar, Greek yogurt, bananas, chocolate chips, eggs and vanilla.
In a separate bowl, whisk flour, baking powder, cinnamon, salt, baking soda and ground ginger.
Whisk in the banana mixture.
Divide among 12 lined muffin cups
Bake at 350 until golden and a toothpick inserted into the centers comes out clean, 20 to 25 minutes.
