Chopped Jicama Salad
Ingredients
2 tablespoons extra-virgin olive oil
1 small clove garlic, minced
1/4 teaspoon salt
14 teaspoon ground pepper
3 cups diced peeled jicama (from about 1 pound)
1/4 cup chopped fresh basil
1/4 cup chopped pepperoncini
1/4 cup chopped sun-dried tomatoes
Directions
Combine oil, garlic, salt and pepper in a
large bowl. Add jicama,basil, pepperoncini
and sun-dried tomatoes. Toss to coat.
Serves 4 about 3/4 cup each
